Foodie Help!

As I have mentioned before, I joined a CSA this year. Basically every week I get a box of various types of produce from local farms, all really fresh and delicious. I was excited to join, not only because it's fresh and local, but also because I felt it would make me try new things. So far, nothing has been too crazy, so I've found easy ways to prepare and eat everything we've gotten. Well, most everything... there is still a head of cone cabbage in my fridge, oops.

Anyway, this week, among other things, there will be beets and green lance kale. While I have eaten beets before (after all, I did study abroad in Poland... can anyone say borscht?) I've never worked with them myself. Also, while I've had my share of kale, I've never had this particular variety. Any advice, tips, recipes? I'm open to most anything!
