What's Been Cookin'

A few weeks ago I asked for some recipes that used beets, since we were getting them from our CSA. A friend of mine passed along this recipe, and I gave it a try.  While it wasn't my favorite thing I've ever made, we did both enjoy it.  I'm not really a fan of goat cheese, so if I make this again I think I will use feta instead, and will probably lick my plate clean!  Bottom line: need to use any beets from the garden? Definitely try this! The color is great...




We've gotten a lot of tomatoes in our weekly boxes, and while I've been known to slice and eat them for a snack, you can only do that so much.  So what's the best combo on earth (in my humble opinion)?  Tomato, mozzarella and basil.  Even better when it's basil from your garden (or the pot on your deck) that's made into pesto.  Put them all together on a pizza? Delish.

I used some farmers market tomatoes in a Caprese salad with fresh mozzarella and basil today - I am loving all the fresh summer produce!
